Brooke's Banana Bread

Everybody is baking it....banana bread that is. This time in quarantine  has certainly raised the love of a rotting banana, or so it appears on instagram. This has been one of my favorite things to bake for many many years but now more than ever it is #trending so I'm sharing my vegan, plant-based, recipe. Enjoy!

2 cups organic oats

1 1/2 cups almond flour

4 large ripe bananas (mash 'em up!)

1/2 cup maple syrup (can add more if you like super sweet)

4 tablespoons chia seeds

4 tablespoons ground flaxseed

2 tablespoon ground cinnamon

1 teaspoon vanilla extract

1 teaspoon salt

1/2 grated apple

1 cup chopped walnuts (if you want)

in a small bowl mash ripe bananas, add maple syrup and set aside

in a small bowl add chia and flaxseed with 1/4 water and set aside

in a large mixing bowl put all remaining ingredients and stir. Add banana and syrup mixture to large bowl. Add chia and flax "eggs" (the mix you made) to the large bowl. Stir everything together.

Grease a 6 large muffin tin. Scoop mixture in and bake for 35 minutes at 350
